At Aficionado Wine and Cigars the best advice we can give you to learn wines is taste as many as you can. This is sound advice -- no book, magazine, TV show or website can substitute for getting your hands on lots of different kinds of bottles and trying them -- with and without food. Wine has been around for thousands of years, and for a newcomer wine can seem very intimidating. Really, many people in the world drink wine simply as a healthy, enjoyable daily drink. Many people make wine in their own back yards out of the available fruits and berries found there. Wine should not be intimidating or pretentious. It should be something you enjoy for your own personal taste preferences. Once we know what you like, we can suggest some other varietals for you to try.

If you want a guide to what makes a wine good when you taste it, we have listed some criteria to help you judge a wine. Below are some basic criteria you can use at home to judge the quality of your wines. These four main criteria are the defining factors used by top winemakers in the world to label their vintage bottles.

  • Balance: A wine must be equal or greater than the sum of its parts. No one particular component should dominate the taste. For example, a wine shouldn't be too fruity or too acidic.
  • Length: The wine experience must not be too fleeting. How long the taste lingers in your mouth.
  • Complexity: The wine must have a mysterious nature to it. It should not be too straightforward or simplistic.
  • Typicity: The wine should reflect the highest achievements from within its particular region
    and style.

Food and Wine pairings is an individual choice. Every person's sense of taste is different. In general, each person should decide for him or herself what combinations of wine and food taste good - don't worry about what anyone else says should work. Typically, you want to drink light-to-dark, just as when you plan a meal you start with delicate tastes and work towards heavier tastes. For this reason, Champagne tends to go very well with appetizers or opening courses in a meal. White wine is usually a match for salads and lighter dishes, while red wine works perfectly with steaks and heavier meat sauces. A port is often the perfect end to a meal, sipped with a piece of chocolate cake. Food and Wine pairings, much like wine tasting, is a skill that takes time and experience to acquire. So, relax and enjoy the process.
