The flavors of blackberries, cherries, currants, cocoa, herbs and sweetly smoked oak are beautiful and complex, yet the tannin-acid balance is near perfect. This single-vineyard wine is one of the finest Sonoma County Cabernets of the vintage. Should age effortlessly through 2014, growing purer and more elegant.
2007 Orin Swift "Papillon" $57.99
The color of the wine is deep garnet with an opaque red tinge. It has aromas of opulent black fruits (cassis, blackberries, black cherries) and a touch of well-integrated, sweet oak. The entry of the wine is soft and lush; it sets up the wide yet well defined mid palate. Dark fruit flavors combined with ripe tannins lead into a long and soft finish.
2007 Dominus Napa Cabernet Sauvignon $147.00
A prodigious example of Dominus, the 2007 represents a hypothetical blend of a Pomerol, Pauillac, and a Napa Cabernet Sauvignon. Deep ruby/purple-colored with a sweet nose of incense, cedar wood, black currants, black cherries, licorice, and a subtle hint of roasted herbs, it is an expansive, savory, opulent wine with a full-bodied mouthfeel, silky tannins, and sensational concentration.
